In many places around the world, Chinese emigrants built over the years their own new, small “countries”. In an effort to attract Indian customers, the Chinese community in Calcutta in the 1970s created an original Indo-Chinese cuisine, designed to be a fusion of Chinese and Bengali tastes. Over time, this food became an integral part of the identity of successive generations of Indian Chinese. The Calcutta Chinese community is proud of its Indo-Chinese cuisine, which is for them equally real – and Chinese – in taste as the traditional cuisine of their ancestors.
